Easy Jar Salad with Poppy's Favourite Dressing

Mason jar salads are healthy, full of flavour, and one of the easiest lunches you’ll ever make. Try this recipe for you next lunch or get together!


  • 2 tbsp Rich Glen Poppy's Favourite Dressing
  • 1/2 Cucumber, sliced
  • 1/2 Red onion, sliced
  • 1/4 Red capsicum, sliced
  • 200g chickpeas
  • 100g feta cheese, crumbled
  • 2 tbsp Rich Glen Kalamata olives - pitted
  • 1 large handful romaine lettuce chopped


  1. Using a 500ml jar, combine all ingredients in the order written above. The dressing should go first, followed by the crunchy ingredients and then followed by the wet ingredients. This will prevent your salad from going soggy. Store in the fridge for up to 3 days.
  2. Transfer the salad to a large bowl, mix to combine and serve.

    Please note, this is only a guide of ingredients. You can use whatever you like as long as you follow the correct order of layering the ingredients!
