Nourish Bowl

Directions

1. Preheat the Oven to 180°C degrees celsius
2. Chop sweet potato into small cubes, leaving the skin on, and place on a lined baking tray.
3. Drizzle with Oil and Season with Salt and Pepper, then massage to coat and pop into the oven to bake for 20-25 minutes until tender and edges start to crisp.
4. While Sweet Potato is cooking, coat the Chicken in Olive oil and season with Salt and pepper.  
5. Place in a heated pan and sear on both sides until golden. 
6. Add in Verjus and cover with a lid to steam for 12-15 minutes or until chicken is tender and cooked through. Take out, place on a board and slice, then set aside. 
7. While the chicken is cooking, make the dressing. Add all the ingredients into a food processor and blend until you reach a smooth consistency.  Place into a bowl and set aside in the fridge until ready to serve. 
7. In the same pan as the chicken, leaving the juice from the chicken in the pan, add the corn cobs and water, cover with the lid, and let the corn cook until tender. Then remove and set aside to cool. Once cooled, slice off the corn kernels. 

8. While the corn is cooking, cook rice/quinoa according to the packet instructions.
9. Take a dinner bowl and start to plate up - Place the rice in first, and then build your bowl, adding the greens, corn, tomatoes, avocado, sweet potato, and snow peas.
10. Sprinkle with some goat cheese, then drizzle a generous amount of dressing over the top, enjoy!
