Extra Virgin Olive Oil is the juice from the olive. Harvested on farm and pressed within hours to ensure the oil is of the highest quality. We pick, press, fill and pack over 190 products on our farm in Yarrawonga. Our olive oil is also the essential ingredient throughout our natural-based Skincare Products.
This includes: Anti-Aging Face creams/serums, Luxurious hand & body creams/oils and a range
of home and bathroom sprays, candles and hand soaps.
We only produce cold-pressed Extra Virgin Olive Oil. “Cold-Pressed” refers to avoiding excessive heat (below 28’C) during the extraction process.This ensures the oil is left with high levels of Antioxidants and polyphenols, which provide EVOO
with its unique flavour and health benefits over other cooking oils.
Yes, our EVOO oil is unfiltered. We leave the oil in climate controlled tanks for 45 days after harvesting, to allow any natural sediment to fall to the bottom, which is then removed from the tank. The oil is then transferred to a separate clean tank, where it is filled with Nitrogen to prevent oxidation occurring.
Polyphenols vary due to a number of factors, such as harvest time, variety of fruit, temperature of the malaxing process and storage conditions of the oil.
Out of all our varieties, Coratina is the highest, ranging from 120 - 400mg/kg.
Frantoio, Kalamata and Arbequina are also quite high, ranging from 100-300mg/kg but often are more mild.
Our early harvest oil, which just received Platinum at the London International Olive Oil Awards, had Polyphenols over 350 mg/kg.
We aren’t certified organic however we feed our trees essential nutrients, liquid trace elements, like zinc, magnesium, boron and calcium, (all organic) for optimum tree health. We spray using an air blaster on our trees, our fertiliser program includes: cow manure, olive waste and straw spread around the base of the tree providing organic mulch which also provides essential nutrients to the soil. Anything that touches the tree is organic even the copper if the trees ever get disease. While we are not certified we are as close to as possible.

We have 36,000 olive trees on our grove in Yarrawonga. We have 8 varieties of olives, each
with their own unique flavour profile – some more robust and peppery, whilst some more buttery
and smooth: Frantoio, Paragon, Coratina, Manzanillo, Kalamata, Arbequina, Spanish Queen
and Koreneiki. Harvest takes place once a year, between the months of April – July.
In a cool dark place, such as a pantry. (Olive oil doesn’t like light, so to keep your oil fresher for longer, avoid these!)
Extra Virgin Olive Oil does degrade over time, and when exposed to light, heat and oxygen. This causes the oil to lose flavour, colour and nutritional benefits. We recommend using it within 2-3 months of opening. EVOO can be stored for up to 2 years in the correct conditions, whilst still retaining its EVOO benefits.
Yes, you can cook with EVOO. Some of our favorite ways to use it include sautéing vegetables, roasting meats, barbecuing, shallow-frying, or drizzling over salads. Extra Virgin Olive Oil has been shown to be the most stable cooking oil when exposed to high heat, thanks to its high levels of polyphenols and antioxidants. Don't be afraid to cook with EVOO; its flavour and nutritional benefits cannot be achieved with alternative oils.
