Sweet Potato Rounds w/ Walnut Pesto

Ingredients
- 2 Medium – Large Sweet potatoes
- 1 ½ Tbsp Rich Glen Signature Extra Virgin Olive Oil (EVOO)
- 1 Tsp Dried Rosemary
- 1 Tsp Dried Oregano
- 1 Tsp Garlic Powder
- Rich Glen Chilli Salt

Directions
- Preheat the oven to 200°C.
- Line two baking trays with paper and set them aside.
- Cut the sweet potato into 2cm thick rounds, then cut a grid shape on the top of each one – being careful to only cut the top and not all the way through. Then place them on the prepared baking trays.
- In a small bowl, mix the olive oil and herbs together, then brush onto the tops of the sweet potato and place them in the oven to cook for 25-35 minutes, or until just soft in the center and crunchy on the top. You can flip the sweet potatoes halfway through cooking to ensure both sides are golden once cooked.
- Once cooked, place them onto a serving board or platter and top each one with pesto and a sprinkle of Chilli Salt. Enjoy the beautiful pop of herby flavours, zesty pesto, and a burst of chilli!
