One Pan Chicken & Rice Bowl
A quick and easy recipe for the most flavourful one-pan chicken, corn and rice bowl! Top it any way you want for a dinner that everyone is going to absolutely love!

Ingredients
- 1 brown onion, finely chopped
- 1 corn, kernels cut off
- 2 tbsp Rich Glen Parmesan Onion Oil
- 1 tsp oregano
- 1 tsp Rich Glen Garlic Salt
- 500-600g chicken thigh fillets
- 1-2 tbsp Rich Glen Signature extra virgin olive oil
- 1 250g packet microwave jasmine rice
- ½ lime, juice and zest
- 160g Greek yogurt
- Pepper, to taste
- Coriander, to serve
- Basil, to serve
Directions
To a small bowl, add the Greek yoghurt, lime juice & zest, along with a good seasoning of cracked black pepper. Stir to combine and set aside in the fridge until you’re ready to serve.
In a small bowl, add the Rich Glen Parmesan Oil, oregano, and Rich Glen Garlic Salt and whisk to combine.
In a large bowl, add the chicken, then pour over the oil mixture and toss to combine well, then set aside in the fridge.
To a large frying pan, add the Rich Glen EVOO and onion and cook until translucent and fragrant. Then add the corn and cook until golden. Remove from the pan.
In the same pan, add the chicken and cook for 4 minutes on each side or until thoroughly cooked through. Remove from the pan and set aside.
Add the rice to the pan, along with the corn, and toss through to heat.
Add the chicken back in and add another generous drizzle of Rich Glen Parmesan Onion oil and heat through.
Remove from the heat and garnish with coriander and basil leaves, and top with dollops of the Greek yoghurt dressing.
