One Pan Chicken & Rice Bowl
A quick and easy recipe for the most flavourful one-pan chicken, corn and rice bowl! Top it any way you want for a dinner that everyone is going to absolutely love!
Ingredients
- 1 brown onion, finely chopped
- 1 corn cob, kernels removed
- 2 tbsp Rich Glen Wild Garlic Parmesan Oil
- 1 tsp dried oregano
- 1 tsp Rich Glen Garlic Salt
- 500-600g chicken thigh fillets
- 1-2 tbsp Rich Glen Signature Extra Virgin Olive Oil
- 1 (250g) packet microwave jasmine rice
- 1 lime, juice and zest
- 160g Greek yogurt
- Pepper, to taste
- Fresh coriander and basil to serve
Directions
- In a small bowl, mix the Greek yoghurt, lime juice, and zest with a generous seasoning of cracked black pepper. Stir to combine, then set aside in the fridge until ready to serve.
- In another small bowl, whisk together the Rich Glen Wild Parmesan Garlic Oil, oregano, and Rich Glen Garlic Salt.
Place the chicken in a large bowl, pour over the oil mixture, and toss to coat evenly. Cover and refrigerate. - Heat a large frying pan over medium heat and add Rich Glen EVOO and onion. Cook until soft and fragrant, then add the corn and cook until golden. Remove from the pan.
- In the same pan, cook the chicken for about 4 minutes per side or until fully cooked. Remove and set aside.
- Add the rice to the pan along with the corn, stirring to heat through. Return the chicken to the pan, drizzle with more Rich Glen Wild Parmesan Garlic Oil, and warm everything through.
- Remove from heat, garnish with fresh coriander and basil, and finish with a dollop of the Greek yoghurt dressing. Serve immediately.
