Super Green Salad

Deliciously crunchy and fresh super green salad. A symphony of fresh greens, crunchy seeds, and the golden touch of Rich Glen extra virgin olive oil.

*This salad can be made in advance – just add all the greens and place them in an airtight container in the fridge. Keep the dressing in a glass jar in the fridge and then combine everything together when ready to serve.



  • ½ small iceberg lettuce, roughly chopped
  • ½ - 1 cos lettuce, roughly chopped
  • 100g rocket leaves
  • 3 spring onions – green ends only, finely sliced
  • 5g (or a small handful) chives, finely chopped
  • 2 tbsp pepita seeds
  • 1 tbsp sunflower seeds
  • Smoked or flaky salt
  • 1 tbsp Rich Glen extra virgin olive oil (EVOO)



  1. Heat a pan on medium heat and add the pepita and sunflower seeds, salt, and Rich Glen extra virgin olive oil (EVOO), and lightly toast until golden. Then set aside to cool.

  2. To a blender, add all the dressing ingredients and blend until smooth. Then pour into a serving jug or glass jar and set aside in the fridge until ready to serve your salad.

  3. To make the salad, add the lettuces, rocket, spring onions, and chives to a large salad bowl and briefly combine.

  4. Then add the toasted seeds and the dressing, mix to combine, and serve immediately.
