Sugar Free Butter Free Guilt Free Chocolate Brownies!

Ooey gooey on the inside, crinkly on the top, and easy peasy to make!

These guilt free brownies are made with extra virgin olive oil, in place of butter! These decadent bars of fudgy goodness have perfectly chewy edges, a super moist middle, and lots of intense chocolate flavour! Yum! 

Ingredients

For the Brownies

  • 4 eggs
  • 1/4 cup Rich Glen Signature Extra Virgin Olive Oil
  • 1 tsp Vanilla essence
  • 1/2 cup Almond flour
  • 1/3 cup Unsweetened cocoa powder
  • 1/2 tsp. Baking soda
  • 1/2 cup Monk fruit sweetener erythritol may also be used
  • 1/4 cup Sugar free chocolate chips (at least 70% cacao)
  • 1/2 cup Chopped nuts - pecans or walnuts - optional but delicious!

For the Brownies

  1. Preheat the oven to 170'
  2. Line a 20 x 20 cm cake tin with baking paper.
  3. whisk together the eggs and melted butter.
  4. In another bowl,combine almond flour, cocoa powder, sweetener, and baking soda.
  5. Add the wet ingredients into the dry ingredients and mix well.
  6. Stir in the chocolate chips and chopped nuts 
  7. Pour into the cake tin and smooth, evenly.
  8. Bake 25 min- 30 min 
  9. Remove the tin from the oven and leave the brownie to cool in the tin for 10min..
  10. Using the baking paper, remove from pan and allow to cool on a wire rack.

For the Topping

  1. In a small mixing bowl, add the chocolate chips and olive oil.
  2. Using 30 sec spurts, melt the chocolate chips and olive oil in the microwave. Stir between and repeat heating until completely melted.
  3. Drizzle the prepared topping on top of your brownie.
  4. Enjoy warm or cold and straight from the fridge.
