Smoked Chicken Salad w/ Creamy Verjus Dressing
My family just love this salad... It's so easy and quick to make, full of fresh “in season” flavours and better still it's healthy!

Ingredients
Salad Ingredients:
- 2 Smoked Chicken Fillets
- 1 cup Green Lentils
- 2 bunches fresh Asparagus
- 1 bunch Broccolini
- 1 bunch Rocket
- ½ cup Flat Leaf Parsley
- 1 Red Onion – thinly sliced
- Lashings of RG Extra Virgin Olive Oil (EVOO)
Dressing Ingredients:
- ½ cup EVOO
- ½ cup Sour Cream
- 1 tbls. Lemon Juice
- ¾ cup Verjus
- Salt & Pepper
Salad Topping:
- ½ cup Bush Tucker Dukkah
Directions
- Slice chicken fillet finely and pop in the fridge.
- Prepare the asparagus and broccolini.
- Cook lentils in a large saucepan of boiling water for 20 minutes.
- Add the broccolini and asparagus to the saucepan, cover and cook for another 2 minutes.
- Drain and whilst hot put into large bowl or tray, drizzle with lashings of Kalamata EVOO, and set aside to cool.
- To make the dressing, place all ingredients in a small bowl and whisk to combine; season to taste.
- Add chicken and the rest of ingredients to the lentil & veg mix and toss together.
- Drizzle with dressing, top with Bush Tucker Dukkah and serve immediately.
