Smashed Avo, Eggs & Cherry RG Sticky Balsamic

My family loves this delicious healthy “bruschetta” style eggs on toast for breaky or a Friday night dinner in front of the fire!

Ingredients

  • 8 Free Range Farm Fresh Eggs
  • 4 Slices Sourdough Bread, toasted
  • 2 Avocados, smashed w/ a little fresh squeeze of lemon or lime
  • 200gm Ross’ Cherry Tomatoes
  • 60gm Feta Cheese, crumbled
  • RG Sticky Balsamic Reduction
  • 1 tbls. Yarrawonga Dukkah
  • pinch of fresh Cracked Pepper and Salt Flakes

Directions

  1. Place smashed avocado onto lightly toasted bread; top with cherry tomatoes, feta, and poached eggs; drizzle with our Sticky Balsamic; and sprinkle with dukkah.
