Pear & Choc Pumpkin Seed Muffins

These treats combine the natural sweetness of pears with the satisfying crunch of chocolate pumpkin seeds. Every bite is a mouthwatering fusion of flavours that will leave you wanting more. They also make a perfect back-to-school treat.

Ingredients
- 1 Cup Self-Raising Flour
- 1 tsp Cinnamon
- 1/4 tsp Ground Ginger
- 1/4 Cup Coconut Sugar
- 1/4 Cup Sunflower Seeds
- 1/2 Cup Pepo Farms Dark Chocolate Pumpkin Seeds (RG Provedore)
- 1/2 Cup Walnuts, roughly chopped
- 1/3 Cup Milk
- 2 tbsp Rich Glen Olive Blossom Honey
- 1 Egg
- 2 tbsp Rich Glen Extra Virgin Olive Oil
- 1 tsp Vanilla Extract
- 1 Large Pear, diced with skin left on
Directions
- Preheat your oven to 180° degrees celsius.
- Line a muffin tray with muffin papers and set aside.
- In a large mixing bowl, combine all the dry ingredients and stir them together.
- Add the wet ingredients to the bowl and mix thoroughly until everything is well combined.
- Gently fold the chopped pear into the batter.
- Divide the mixture evenly among the muffin tray, filling each paper about 3/4 full.
- Place the tray in the preheated oven and bake for approximately 25-30 minutes, or until a skewer inserted into the muffins comes out clean.
- Remove the muffins from the oven and allow to cool on a baking rack for 5-10 minutes.
