Chilli Tomato Risotto

Ingredients
- 1 Tbsp Rich Glen Signature Extra Virgin Olive Oil
- 1 Brown Onion, Diced
- 1 Tbsp Minced Garlic
- 1 Cup Jasmine Rice
- 1 Can Crushed Tomatoes
- 1 Can Cannellini Beans
- 1 ½ Cup Rich Glen Pasta Sauce
- 2 Tsp Smoked Paprika
- 1-2 Tbsp Rich Glen Agrumato Chilli Oil
- 2 Cups Vegetable Stock
- Handful Basil Leaves
Directions
- Add RG Signature Extra Virgin Olive Oil, onion, and minced garlic to a large pot and cook until onions are translucent, and garlic is fragrant.
- Add in cannellini beans, tomatoes, pasta sauce, vegetable stock, rice, paprika, and chilli oil and bring to a simmer.
- Once simmering, cook for 25-30 minutes on low heat until the rice is tender. If you find the risotto is becoming too thick, add more vegetable stock as it cooks.
- Once rice is tender, serve with a few fresh basil leaves and an extra drizzle of Rich Glen Agrumato Chilli Oil.
