Chilli Tomato Risotto

Tomato Risotto is a flavourful and satisfying dish that combines the rich flavours of tomatoes, cannellini beans, and aromatic spices. This recipe delivers a deliciously comforting meal that is easy to prepare. With the perfect blend of ingredients and a touch of heat from our Agrumato Chilli Oil, this risotto is sure to impress!

  1. Add RG Signature Extra Virgin Olive Oil, onion, and minced garlic to a large pot and cook until onions are translucent, and garlic is fragrant.
  2. Add in cannellini beans, tomatoes, pasta sauce, vegetable stock, rice, paprika, and chilli oil and bring to a simmer.
  3. Once simmering, cook for 25-30 minutes on low heat until the rice is tender.  If you find the risotto is becoming too thick, add more vegetable stock as it cooks.
  4. Once rice is tender, serve with a few fresh basil leaves and an extra drizzle of Rich Glen Agrumato Chilli Oil.
