Nectarine & Peach Tarts

You're going to adore these Summery Nectarine & Peach Tarts. These super easy-to-make treats feature sweet peach slices, thyme, and our Persimmon Apricot Jam for a perfect balance of fruity sweetness.

  1. Preheat the oven to 180°C.
  2. Line 2-3 trays with baking paper and set them aside.
  3. Take 2 sheets of puff pastry and allow them to slightly defrost.
  4. Cut each pastry sheet into 6 rectangles and lay the pastry onto the prepared baking trays.
  5. Spread a small amount of Persimmon Apricot Jam on each rectangle, making sure to leave about a ¼-inch border.
  6. Add some thyme leaves onto the jam.
  7. Layer 3-4 slices of peach/nectarine onto each tart.
  8. Fold up the edges of the tarts onto the peaches.
  9. Brush the edges of the pastry with Olive Oil.
  10. Add a few more thyme leaves to each tart, then sprinkle with hazelnuts and coconut sugar.
  11. Place them in the oven to cook for 20-25 minutes until the pastry is cooked and golden around the edges.
  12. Drizzle with Olive Blossom Honey, top with your favourite ice cream, and serve to enjoy this flavoursome fresh summer dessert!
