Nectarine & Peach Tarts
You're going to adore these Summery Nectarine & Peach Tarts. These super easy-to-make treats feature sweet peach slices, thyme, and our Persimmon Apricot Jam for a perfect balance of fruity sweetness.

Ingredients
- 2 Sheets puff pastry, cut into 6 rectangles
- 2-3 Nectarines and/or peaches, we’ve used a mix of both for this recipe, thinly sliced
- 3-4 Tbsp Rich Glen Persimmon Apricot Jam
- Rich Glen Olive Blossom Honey, to drizzle
- 2-3 Sprigs Fresh thyme leaves
- 2 Tbsp Rich Glen Extra Virgin Olive Oil
- 2-3 Tbsp Hazelnuts, toasted and chopped
- Coconut Sugar, to season
Directions
- Preheat the oven to 180°C.
- Line 2-3 trays with baking paper and set them aside.
- Take 2 sheets of puff pastry and allow them to slightly defrost.
- Cut each pastry sheet into 6 rectangles and lay the pastry onto the prepared baking trays.
- Spread a small amount of Persimmon Apricot Jam on each rectangle, making sure to leave about a ¼-inch border.
- Add some thyme leaves onto the jam.
- Layer 3-4 slices of peach/nectarine onto each tart.
- Fold up the edges of the tarts onto the peaches.
- Brush the edges of the pastry with Olive Oil.
- Add a few more thyme leaves to each tart, then sprinkle with hazelnuts and coconut sugar.
- Place them in the oven to cook for 20-25 minutes until the pastry is cooked and golden around the edges.
- Drizzle with Olive Blossom Honey, top with your favourite ice cream, and serve to enjoy this flavoursome fresh summer dessert!
