Chopped Mediterranean Salad
If you're looking for an easy Mediterranean salad, try this one! Fresh veggies and feta, tossed in our signature olive oil and seasoned with our Chilli Salt. A quick and delicious recipe for any occasion!

Ingredients
- 400g Penne pasta
- 2 handfuls spinach leaves
- 1 Large cucumber
- ½ Bunch basil leaves
- 150g Grilled capsicum (jar)
- 120g Rich Glen Kalamata Olives - pitted
- 3 Tbsp Pine nuts
- 100g Feta
- Rich Glen Signature extra virgin olive oil, to drizzle/serve
- Rich Glen Chilli Salt, to season
Directions
- Cook pasta according to the packet instructions and set it aside.
- On a large chopping board, place the spinach leaves, cucumber, capsicum, and basil, then roughly chop them.
- Add the olives and pine nuts, chopping again until all the ingredients are well combined and in medium pieces.
- Place the cooled pasta into a large salad bowl.
- Add the chopped salad over the pasta and mix together until well combined.
- Crumble some feta over the mixture.
- Drizzle a generous amount of olive oil and sprinkle Chilli Salt to season well (add more for extra chilli or salty flavour, depending on your preferences—it’s so delicious!).
