Mediterranean Spelt Fusilli Salad
A vibrant mix of cherry tomatoes, Kalamata olives, sundried tomatoes, chickpeas, and feta, tossed in our signature extra virgin olive oil, topped with toasted pine nuts and fresh basil. A taste of the Mediterranean in every bite! Serve hot or cold.

Ingredients
- 400g Island Pasta Spelt Fusilli
- 2 Tbsp Rich Glen Signature Extra Virgin Olive Oil
- 250g Cherry Tomatoes, chopped in halves
- 160g Rich Glen Kalamata Olives, pitted
- 125g Sundried tomatoes, roughly chopped
- 200g Chickpeas, rinsed & drained
- ½ Bunch basil Leaves roughly chopped
- 40g Pine nuts, toasted
- 100g Feta, crumbled
- Rich Glen Chilli Salt & pepper, to season
Directions
- Cook the pasta according to the packet instructions.
- Once the pasta is cooked and cooled, add it to a large salad bowl.
- Drizzle with olive oil, Chilli Salt and Pepper, toss to coat.
- Add the salad ingredients and toss to combine.
- Top with fresh basil, and another generous drizzle of olive oil, and serve.
*The salad can be stored in the fridge in an airtight container for up to 3-4 days.
