Apple & Cinnamon Slice

Ingredients
- 3 Eggs
- 1/3 Cup Plain Yoghurt
- 1/3 Cup Milk
- 1/4 cup Rich Glen Signature olive oil (EVOO)
- 1/4 Cup Rich Glen Olive Blossom Honey
- 1/4 Cup Coconut Sugar
- 1 Cup Almond Flour
- 1 Cup Oat Flour
- 1 Tsp Baking Powder
- 1/4 Tsp Baking Soda
Apple Layer:
- 3 Green apples, peeled and chopped into small chunks
- 1 Tbsp Coconut Sugar
- 1 Tsp Cinnamon
- 1/8 Cup Water
Directions
- Preheat the oven to 170°C.
- Line a square cake tin (approximately 21cm) with baking paper and set it aside.
- Add the apples, coconut sugar, and cinnamon to a medium pan and simmer for 8-10 minutes or until the apples are very soft. Then, remove from the heat and allow to cool.
- While the apples are cooking, add the wet ingredients to a large mixing bowl and whisk together until well combined. Then, add the dry ingredients and fold through.
- Pour about half of the mixture into the prepared cake tin, then carefully add the apples over the top.
- Sprinkle with a thin layer of coconut sugar and cinnamon. Then, pour the remaining mixture over the top to cover the apples.
- Sprinkle over a little more coconut sugar and cinnamon and place into the oven to bake for around 35-40 minutes, or until golden and a skewer inserted comes out clean.
- Allow to cool in the tin for about 5-10 minutes before removing and placing on a wire rack to cool completely, then slice.
