Lemon Olive Oil Cake

Lemon Olive Oil Cake, your new favourite lemon dessert!

Our Lemon Lime Agrumato oil is ridiculously easy, moist and just so delicious.Pair it with your favourite olive leaf tea, or a cup of coffee. Yum!

  • 2 cups almond flour
  • 1/8 cup RG EVOO
  • 1/8 cup RG Lemon Lime Agrumato olive oil
  • ¼ cup RG Olive Blossom Honey
  • ¼ cup lemon juice
  • 2 eggs
  • 1 tbsp lemon zest (for cake)
  • 1 tsp pure vanilla extract
  • ¼ tsp baking soda


  • 2 tbsp monk fruit sweetener or white sugar if you prefer
  • 1 tbsp lemon zest


  1. Preheat oven to 180°C.
  2. Line a loaf tin with baking paper and set aside.
  3. Add all the cake ingredients into a large mixing bowl, and mix until all is combined.
  4. Pour mixture into the loaf tin and bake for 30-40 minutes or until a skewer comes out clean when inserted.
  5. While the cake is cooking, combine the sweetener/sugar and lemon zest, and rub together with your fingers, then set aside.
  6. Once the cake is cooked, sprinkle the sugar mixture over the top.
  7. Leave for 5 minutes in the tin before transferring to a wire rack to cool completely before slicing.
