Easy Chicken Caesar Salad
Tender chicken, crisp croutons, creamy avocado, and kale, all brought together with a generous drizzle of RG Poppy’s Favourite Dressing. You'll keep coming back to this extremely easy, and delicious recipe!

Ingredients
- 250g Chicken Breast/Tenderloins, grilled
- 2 Tbsp Rich Glen Signature extra virgin olive oil (EVOO)
- Rich Glen Chicken Salt
- 1 small Cos Lettuce, roughly chopped
- 2-3 Kale Leaves, roughly chopped
- 1 Avocado, sliced thinly
- 2 Slices Sourdough bread
- 1 Tbsp Rich Glen Wild Garlic Olive Oil
- 2 Tbsp Pepita Seeds, Toasted
- 2-3 Tbsp Rich Glen Poppy’s Favourite Dressing
- Parmesan cheese
Directions
- In a medium bowl, add the chicken, 1 Tbsp RG EVOO, and salt. Toss to combine.
- Cook the chicken on a high-heat griddle pan until cooked through, then roughly chop and set aside.
- To make the croutons, roughly tear up the bread and add it to a pan along with RG Garlic olive oil. Cook on high heat until golden and crispy, then set aside.
- Add the kale to a small bowl along with 1 Tbsp RG EVOO and massage thoroughly.
- To assemble the salad, use two salad bowls. Add the lettuce and kale.
- Then, add the sliced avocado, chicken, croutons, sprinkle with pepita seeds, and generously drizzle with RG Poppy’s Favourite Dressing. Season with salt and pepper, enjoy!
