Lamb Skewers

Ingredients
- Approx. 500g Lamb Eye of Loin
- 1 Tbsp Rich Glen Lamb Roast Meat Rub
- 1-2 Tbsp Rich Glen Signature Extra Virgin Olive Oil (EVOO)
- Rich Glen EVOO Spray
- 1 Lemon - Juice Only
Optional Additions to Serve Lamb With:
- Tzatziki
- Rosemary & Sea Salt Flatbreads, Pitas, or Wraps
Directions
- Cut the lamb loin into thin slices and place them in a medium bowl.
- Add Rich Glen Lamb Roast Meat Rub and Rich Glen EVOO, then toss to coat the meat thoroughly.
- Thread the lamb slices onto skewers. (If using wooden skewers, soak them in a bowl of water for 10-15 minutes before adding the meat.)
- Heat a griddle pan over medium to high heat and spray it with Rich Glen EVOO spray.
- Place the lamb skewers on the griddle pan and cook for about 4 minutes on each side or until they reach your desired level of doneness.
- When the skewers are almost cooked, drizzle lemon juice over the meat.
- Once cooked, remove them from the heat and serve with flatbreads, pitas, or wraps, along with fresh toppings such as homemade tzatziki, lettuce, tomatoes, and onions.
