Lamb Sausage Rolls w/ Bacon & Mint
A gorgeous winter recipe the whole family will love!
Seasoned to perfection with our Lamb Roast Meat Rub and baked to golden brown, these lamb sausage rolls are best enjoyed with a generous dollop of our Nana’s Relish or the fresh flavours of our Mint Lamb Jam...yum!

Ingredients
- 1 Tbsp Rich Glen Signature olive oil (EVOO)
- 500g Lamb Mince
- ½ Cup Sourdough Breadcrumbs (or any breadcrumbs will work)
- 1 Brown Onion, finely chopped
- 3-4 Rashers Bacon, finely chopped
- 1 Egg
- 2 Tbsp Rich Glen Lamb Meat Rub
- 2 Cloves Garlic, minced
- 2 Tbsp Fresh Mint leaves, finely chopped
- 3 Sprigs Rosemary, finely chopped
- 2 Sheets Puff Pastry
- 1 Egg, beaten (extra for brushing on pastry)
- Sesame seeds
Directions
- Preheat the oven to 180°C. Line 2 trays with baking paper and set aside.
- In a heated pan, add the olive oil, onion, bacon, rosemary, and Rich Glen Lamb Roast Meat Rub. Cook for 5-6 minutes until the onion has softened and the bacon is slightly golden.
- Take the pastry sheets from the freezer and lay them out flat to thaw.
- In a large bowl, combine the lamb mince, fresh mint, egg, breadcrumbs, and the onion/bacon mixture using your hands.
- Cut the pastry in half and divide the mince into 4 portions.
- Place the mince onto each section of the pastry, fold over the edges, and cut into halves or thirds. Place the sausage rolls seam-side down on the baking trays.
- Brush the tops of the sausage rolls with the beaten egg and sprinkle with sesame seeds.
- Bake in the oven for 30-35 minutes or until the pastry is golden brown and the mince is cooked through.
