Mexican Pasta Bake
Ingredients
- 1 Tbsp Rich Glen Signature Extra Virgin Olive Oil (EVOO)
- 1 brown onion, finely chopped
- 4 rashers short cut bacon, finely chopped
- 500g lean beef mince
- 700ml Rich Glen Pasta Sauce
- 400g tin four bean mix
- 1 Tbsp smoked paprika
- ½ Tbsp cumin
- ½ Tbsp Cajun spice
- 1-2 tsp garlic powder
- 300g pasta of your choice
- Basil leaves, for garnish
- 100g shredded mozzarella cheese
- Small handful of breadcrumbs of your choice
Directions
- Preheat the oven to 200°C.
- Cook the pasta as per packet instructions.
- To a large ovenproof pan, add the olive oil, onion, and bacon, and cook until the onion starts to become translucent.
- Add the beef mince and cook until the mince is almost cooked through.
- Add the beans, spices, and Rich Glen Pasta Sauce, and mix thoroughly.
- Simmer for 5-6 minutes.
- Once the pasta is cooked, drain and add to the beef mixture, then combine.
- Top with a sprinkle of breadcrumbs and shredded cheese.
- Place into the oven and bake until the cheese is melted and golden.
- Remove from the oven, top with fresh basil leaves, a sprinkle of Rich Glen Chilli Salt, and serve immediately. Enjoy!
