Ingredients
- 125g button mushrooms
- 1/8 red cabbage
- 1/8 white cabbage
- 1 carrot
- 2 spring onions
- 1 inch knob ginger, skin taken off and minced
- 2 tbsp Rich Glen Wild Garlic oil
- 1 tsp sesame oil
- 3 tbsp sweet soy sauce
- 1 tsp salt
- 1 disc vermicelli noodles
- 1 packet wonton wrappers (pack of 30)
- 2 tbsp Rich Glen Signature extra virgin olive oil
- Rich Glen Yarrawonga Sweet Chilli Sauce to serve
Directions
- Place the vermicelli noodles into a bowl and cover with water for 10-15 minutes while you prepare all the veggies.
- Put the vegetables through a food processor, one at a time and chop until very fine. If you don’t have a food processor, you can finely chop with a sharp knife.
- Add the veggies to a large frying pan, along with the Wild Garlic oil, sesame oil, soy sauce, and salt, and cook on medium to high heat.
- Drain the noodles and chop them finely, then add them to the cooking veggies.
- Once the veggies are soft, remove them from the heat and allow them to cool slightly.
- Take a wonton wrapper and place about a teaspoon size of veggie mix into the centre.
- Wet around the edge of the wrapper with some water. This is best done by dipping your finger into a bowl of water and then running it around the edge of the wrapper.
- Bring the sides up to join, and then carefully make small pinches/folds along each side to seal them together. Complete this step until you have made all the dumplings.
- To a large frying pan, add 2 tbsp EVOO on medium heat and then place the dumplings in rows. You may need to cook them in two batches, as you don’t want to overcrowd the pan.
- Once the bottoms of the dumplings are golden, pour in about 2/3 cup of water, or until the water is about 1 – ½ cm up the edge of the pan.
- Place a lid on the pan and cook for 7-8 minutes or until the water has evaporated and the dumplings are cooked. **Be sure to keep an eye on the water, as it can evaporate quite quickly in the last few minutes.
12. Once cooked, place the dumplings onto a serving plate along with some Sweet Chilli Sauce for dipping and enjoy!
