Veggie Frittata

Ingredients
- • 1 tbs Rich Glen Basil Lime Thyme olive oil
- • 1/2 red capsicum, chopped
- • 1 onion chopped
- • 1 tomato, chopped
- • 50g baby purple kale leaves or English spinach
- • 4 eggs, lightly beaten
- • 25g Fetta cheese, crumbled
- • sprinkle Rich Glen River Salt
- • chopped flat-leaf parsley
Directions
- Heat oil in a small ovenproof frypan, add capsicum, and onion, and cook for 5 minutes.
- Add tomato and kale, season with salt flakes, and cook for 2 minutes or until kale is wilted and tomato has softened. Add egg and cook, stirring, for 1 minute or until combined. Sprinkle over the feta, then place the pan under the grill and cook for approx 5 minutes until set.
- Cool slightly in the pan, then carefully remove the frittata and sprinkle with fresh parsley.
