Nectarine & Goats Cheese Salad

This refreshing salad combines the sweet juiciness of ripe nectarines, the creamy richness of goat cheese, and the satisfying crunch of walnuts. A beautiful fresh salad, perfect for summer and so easy and quick!

Ingredients

  • 1 Cos lettuce, roughly chopped
  • 6-8 mint leaves, roughly chopped
  • ½ Bunch basil Leaves, roughly chopped
  • 5-6 Nectarines, yellow & white, pitted and sliced into eighths
  • 100g Goats cheese, or feta if you prefer
  • 1 Cup Walnuts
  • 1-2 Tbsp Rich Glen Sticky Balsamic Reduction

Directions

  1. In a large salad bowl or on a plate, combine the chopped lettuce, mint, and basil. Next, layer the nectarines, goat cheese, and walnuts.
  2. Finally, generously drizzle RG Sticky Balsamic Reduction over the salad, and serve.
  3. Enjoy this delightful summer combination of fresh flavours and textures!
