Nectarine & Goats Cheese Salad
This refreshing salad combines the sweet juiciness of ripe nectarines, the creamy richness of goat cheese, and the satisfying crunch of walnuts. A beautiful fresh salad, perfect for summer and so easy and quick!

Ingredients
- 1 Cos lettuce, roughly chopped
- 6-8 mint leaves, roughly chopped
- ½ Bunch basil Leaves, roughly chopped
- 5-6 Nectarines, yellow & white, pitted and sliced into eighths
- 100g Goats cheese, or feta if you prefer
- 1 Cup Walnuts
- 1-2 Tbsp Rich Glen Sticky Balsamic Reduction
Directions
- In a large salad bowl or on a plate, combine the chopped lettuce, mint, and basil. Next, layer the nectarines, goat cheese, and walnuts.
- Finally, generously drizzle RG Sticky Balsamic Reduction over the salad, and serve.
