- Drizzle both slices of bread with the olive oil then divide the cheeses between them
- Heat pan with another splash of EVOO, add both side of bread, cheese side up and cover with lid to help the cheese to start to melt.
- After 2 minutes, remove the lid and continue frying until the underside of the bread is golden and the cheese looks melty. Carefully, sandwich the 2 slices together so all the cheeses are in the middle, then gently press down with a spatula and continue cooking until the cheese has melted and the bread is deep golden – turn again adding more olive oil if needed.
- Cut the toastie in half and sprinkle with the river salts, serve straightaway with our nanas relish.
