Ingredients
- ¼ Large Watermelon, cut into large triangular chunks
- 3-4 Large Passionfruit, for pulp
- 2 Tbsp Rich Glen Native Citrus Agrumato Olive Oil
- 2 Tbsp Rich Glen Olive Blossom Honey
- ¼ Cup Pistachios, chopped finely
- Mint Leaves, to garnish
Directions
- In a large serving bowl, arrange the watermelon chunks to sit nicely in and around the bowl.
- Add the passionfruit pulp over the top of the watermelon.
- In a small bowl, whisk together the Rich Glen Native Citrus Agrumato Olive Oil and Rich Glen Olive Blossom Honey, and then drizzle it over the watermelon.
- Sprinkle the pistachios over the dish.
- Garnish with a few mint leaves and serve immediately as a platter.
