Zesty Steak Sandwich

Ingredients
Serves 2
- 4 slices of thick-cut sourdough
- 1 (160g) eye fillet steak
- Rich Glen Signature extra virgin olive oil
- Salt and pepper to taste
- Handful of rocket
- Rich Glen Zesty Lemon Lime Dressing
- Half an avocado, mashed
- Quincy Jones Bread and Butter Pickles - find them instore
Directions
- Heat a griddle pan on high. While waiting for it to heat, season the steak on both sides with a drizzle of olive oil and salt and pepper.
- When the pan is hot, place the steak in and cook for 4 minutes on each side, or until it is cooked to your liking. Four minutes per side will yield a medium steak that is still pink in the middle.
- While the steak is cooking on the second side, toast the sourdough and spread the avocado over it. Top with rocket and pickles.
- Once the steak is cooked, take it out of the pan and let it rest for 2 minutes. Then slice it thinly and divide between both sandwiches.
