Smokey Chicken Salad w/ Poppy's Favourite
This vibrant and flavourful smokey chicken salad combines tender, spiced chicken thigh fillets with fresh rocket, zesty lemon, and a generous drizzle of our Poppy’s Favourite Dressing. Perfect for a light and satisfying meal, it can be served as is or enjoyed on toasted sourdough for a delicious weekend lunch or appetiser. Simple to prepare, this dish is a wonderful addition to any menu!

- 700-800g chicken thigh fillets, skin off
- 1 tbsp smoked paprika
- ½ tbsp cumin powder
- ½ tbsp garlic powder
- ½ tbsp Cajun seasoning
- Pepper, to season
- 2 tbsp Rich Glen Signature extra virgin olive oil (EVOO)
- 1 ½ lemons - x1 sliced thinly, the other half juiced and drizzled over salad
- Approx. 120-150g rocket
- Sourdough bread or rolls (optional)
- Rich Glen Poppy’s Favourite Dressing
Directions
- In a large bowl, add the chicken thighs, olive oil, and spices, and coat the chicken until well covered with all the spices.
- Heat a large griddle pan or fry pan on medium to high heat and place the chicken thighs in. Cook for 1-2 minutes on each side to crisp the outside, then reduce the heat to medium-low and continue to cook for 15-20 minutes, turning occasionally, until the chicken is thoroughly cooked through.
You may need to do this in batches if your pan isn’t big enough. - Once cooked, remove from the heat and set aside to cool slightly.
- Prepare a large round salad serving board or plate with the rocket leaves, then slice the chicken and assemble over the rocket leaves, along with the lemon slices.
- Drizzle over a little extra olive oil, the lemon juice, and a very generous amount of Poppy’s Favourite Dressing.
- You can serve the salad as is, or a great option is to toast some sourdough slices or rolls and layer the salad on top - it makes the perfect weekend lunch or entertaining entrée/appetiser!
