Chicken
- 700-800g chicken breast, cut into strips
- 150g Greek yogurt
- 1/3 cup Rich Glen Blood Orange Fig Dressing
Wraps
- 4 souvlaki wraps (or wraps of your choice)
- Salad and veggies of your choice. We’ve kept it simple with:
- 120g rocket, lettuce, or spinach leaves (of your choice)
- 1 continental cucumber, cut into small strips
- Rich Glen Blood Orange Fig Dressing, to serve
- Salt, to season
You can use any type of salad in these wraps that works for you! You could even swap the wraps for rice or a simple pasta drizzled with olive oil.
Directions
- In a large bowl, add the chicken, yogurt, and RG Blood Orange Fig Dressing, and mix to coat the chicken. Place it in the fridge to marinate for 30 minutes.
- While the chicken is marinating, prepare your salad and veggies for the wraps.
- Heat a large griddle pan over medium to high heat and cook the chicken for 4-5 minutes on each side or until cooked through.
- Just before serving, heat the souvlaki wraps in a frying pan to toast them gently. Add each wrap to a plate, then top with the salad and veggies of your choice, the chicken, an extra drizzle of RG Blood Orange Fig Dressing, and season with salt. Enjoy!
- We served this dish with a side of roast sweet potato chips seasoned with our Rich Glen Chicken Salt.
