Ingredients

Option 1:

Suggested Sides:

  • 1 Avocado
  • 2 Tbsp Rich Glen Zesty Lemon Lime Dressing
  • 2 Tomatoes, cut into small chunks
  • 1 Green chilli, sliced finely
  • 1 Handful coriander, finely chopped
  • 1 Medium cucumber, cut into small pieces
  • Sour cream
  • Corn chips
  • Grated cheese

Option 2:

  • 1kg Beef mince
  • 1 Tbsp smoked paprika
  • 1 Tbsp cumin
  • 1 Tbsp garlic powder
  • 1 Tbsp cajun seasoning
  • 1 Tsp coriander powder
  • 2 Tbsp Rich Glen Agrumato Fiery Chilli Oil
  • 1 Brown onion
  • 2 Cloves garlic, crushed
  • 2 400g Tins crushed tomatoes
  • 1 Can cannellini beans or four bean mix (if preferred)

Directions

Method (Option 1):

  1. Follow the instructions on the Tex Mex Chilli Mix and cook accordingly.
  2. Just before serving, mash the avocado in a medium bowl along with the coriander and Zesty Lemon Lime Dressing to create a beautiful, rich guacamole.
  3. Arrange your sides in small bowls or on a large serving board so everyone can create their own 'Mexican Bowl'.
  4. Place everything on the table and enjoy the amazing, bold, and rich flavours of your own Mexican Bowl!

Method (Option 2):

  1. In a large pan, heat the Agrumato Fiery Chilli Oil. Add the onion and garlic, cooking until the onion starts to soften and the garlic is fragrant.
  2. Add the beef mince and brown it, then add the spices and continue cooking for 2-3 minutes.
  3. Add the tomatoes and beans, then simmer for 30-40 minutes on low until the tomatoes have reduced slightly. If the tomatoes are cooking and reducing too quickly, you may need to add a little water.
  4. Just before serving, mash the avocado in a medium bowl along with the coriander and Zesty Lemon Lime Dressing to create a beautiful, rich guacamole.
  5. Arrange your sides in small bowls or on a large serving board so everyone can create their own bowl.
  6. Place everything on the table and enjoy the amazing, bold, and rich flavours of your own Mexican Bowl!
