Pear Sticky Date Cake w/ Caramel Syrup

Winter calls for our delicious Pear Sticky Date Cake with the viral Olive Oil Caramel Syrup.

This moist cake features sweet dates, juicy pears, and crunchy walnuts. Perfectly paired with ice cream, it's a delightful dessert that's both comforting and gourmet. Yum!

Wet Ingredients

Dry Ingredients

  • 2 Cups Almond Flour
  • 1 Tsp Baking Powder
  • ½ Tsp Bi-Carb Soda
  • 1 Tsp Cinnamon
  • 1 Tsp Mixed Spiced
  • 2 Pears, cut into small cubes
  • 2 Tbsp Walnuts, finely chopped

Directions

  1. Preheat oven to 180°C.
  2. Line a square cake tin (approximately 17 x 17cm) with baking paper and set aside.
  3. In a medium bowl, add the dates and sprinkle with ½ tsp bicarb soda, then cover with boiling water and let rest for 10-15 minutes.
  4. In a separate bowl, combine the eggs, olive oil, maple syrup, vanilla essence, and Agrumato Lemon Lime Oil. Mix well.
  5. In another bowl, add almond flour, baking powder, ½ tsp bicarb-soda, cinnamon, and mixed spice. Mix dry ingredients together, then pour in the wet mixture. Stir well to combine.
  6. Mash the soaked dates until thick and well combined (some chunky bits are okay), then fold into the batter gently.
  7. Pour the batter into the prepared cake tin. Top with cubed pears, chopped walnuts, and a sprinkle of cinnamon.
  8. Bake for 30-35 minutes or until cooked through and pears are golden on top.
  9. Best served warm with ice cream and our Caramel Olive Oil Syrup.

Caramel Olive Oil Syrup:

Combine ⅓ cup Rich Glen Signature Olive Oil and ⅓ cup maple syrup. Whisk until emulsified and combined. Pour over Pear Sticky Date Cake and ice cream. Enjoy!
