Sticky Balsamic Omelette

Ingredients
- 2 eggs
- 2 slices of ham, thinly cut
- 2-3 button mushrooms, thinly sliced
- 15g Parmesan cheese, finely grated
- A small handful of rocket or spinach leaves
- 5-6 cherry tomatoes (optional: cook the cherry tomatoes first in a small pan with some Rich Glen Sticky Balsamic)
- Rich Glen Olive Oil Spray
- Goat's cheese, to serve (optional)
- Rich Glen Bush Tucker Dukkah, to serve
- Rich Glen Sticky Balsamic Reduction, to serve
Directions
- Preheat a small to medium frying pan on medium heat.
- In a small bowl, lightly beat both eggs together.
- Lightly spray the pan with olive oil.
- Pour in the eggs to cover the pan.
- Gently add the ham, mushrooms, Parmesan cheese, and tomatoes, then sprinkle Rich Glen Bush Tucker Dukkah on top of the eggs.
- Cover the pan with a lid and let the omelette cook for 10 minutes or until it is almost set.
- Using a slotted spatula, flip half of the omelette over so it’s folded in half and cook for 2-3 minutes until completely cooked and set.
- Place onto a plate and top with some fresh goat's cheese, a generous drizzle of Rich Glen Sticky Balsamic Reduction, and another sprinkle of Bush Tucker Dukkah. Enjoy!
