Sticky Balsamic Omelette

Elevate your breakfast game with this delicious and nutritious omelette!   1. Preheat a small to medium frying pan on medium heat.
  2. In a small bowl, lightly beat both eggs together.
  3. Lightly spray the pan with olive oil.
  4. Pour in the eggs to cover the pan.
  5. Gently add the ham, mushrooms, Parmesan cheese, and tomatoes, then sprinkle Rich Glen Bush Tucker Dukkah on top of the eggs.
  6. Cover the pan with a lid and let the omelette cook for 10 minutes or until it is almost set.
  7. Using a slotted spatula, flip half of the omelette over so it’s folded in half and cook for 2-3 minutes until completely cooked and set.
  8. Place onto a plate and top with some fresh goat's cheese, a generous drizzle of Rich Glen Sticky Balsamic Reduction, and another sprinkle of Bush Tucker Dukkah. Enjoy!
