Rocket & Parmesan Pasta Salad
This vibrant and refreshing pasta salad is packed with bright, zesty flavours, making it the perfect dish for gatherings. The combination of our new Wild Garlic Parmesan Olive Oil, lemon zest, and freshly toasted pine nuts create a deliciously rich and nutty salad, while the rocket adds a peppery freshness. Enjoy this as a main dish with grilled chicken or as a flavourful side to steak or lamb.

Ingredients
- 1 packet (450-500g) of your favourite spiral pasta
- 1-2 tbsp Rich Glen Wild Garlic Parmesan Infused Olive Oil
- Zest of 1 lemon
- 200g (approx.) rocket/greens salad (adjust to preference)
- 80g pine nuts, lightly toasted
- Freshly grated Parmesan cheese, to taste
Directions
- Heat a small pan over medium heat. Add the pine nuts and toast them lightly until golden and fragrant. Once toasted, transfer the pine nuts to a plate and let them cool. Set aside.
- Cook the pasta according to the package instructions, aiming for al dente texture. Once cooked, drain the pasta, reserving about 2 tbsp of pasta water.
- Place the cooked pasta in a large serving bowl. Add the reserved pasta water and 1-2 tbsp of Rich Glen Wild Garlic Parmesan Olive Oil, stirring well to coat the pasta.
- Gently mix in the rocket or greens salad, allowing the warmth of the pasta to slightly wilt the greens.
- Add the lemon zest and top with a generous sprinkle of freshly grated Parmesan cheese.
- Finally, finish the salad by topping it with the toasted pine nuts for a delightful crunch.
Serve this salad as a main dish with grilled chicken, or as a side to steak or lamb.
