Porcupine Meatballs
This recipe is going to unlock some childhood memories! Rich Glen Pasta Sauce meets savoury meatballs, simmered to perfection in a flavoursome blend of our Verjus. A heartwarming dish, served on a bed of fluffy mashed potatoes. Comfort food at its finest!

Ingredients
- 700gm jar Rich Glen Pasta Sauce
- 100ml Rich Glen Verjus
- 600g Beef Mince
- Rich Glen Wild Garlic olive oil, to serve
- 2 cups water
- 1 brown onion, finely chopped
- 1/2 cup white long-grain rice
- rinsed handful parsley leaves, finely chopped
- Mashed potato to serve
Directions
- Place Rich Glen Pasta Sauce, Verjus and 2 cups cold water in a large saucepan over medium-high heat. Bring to the boil.
- Add meatballs to boiling soup. Reduce heat to low. Cover and simmer for 40 minutes or until rice tender and meatballs cooked through. Serve with mashed potato.
