Peach Salad with Garlic Confit Balsamic Dressing
Say hello to the perfect summer salad. This peach salad is bursting with savoury and sweet flavours and has the most delicious garlic confit and balsamic glaze dressing.
Ingredients
Garlic Confit Balsamic Dressing
3 tablespoons Rich Glen Frantoio extra virgin olive oil
1 tablespoon Rich Glen Sticky Balsamic
½ shallot
1 teaspoon mustard
10 garlic confit cloves
Peach Salad
4 peaches de-seeded and quartered
1 burrata
250g rocket
½ red onion finely sliced
50g walnuts
100g prosciutto
2 slices sourdough
Directions
Garlic Confit Balsamic Dressing
Place all ingredients into a food processor and blend until well combined. Alternatively, you can place all ingredients into a jar and shake well until well combined.
Peach salad
Drizzle each side of your sourdough slice with olive oil and place into a cast iron pan. Cook on a very low heat for roughly 10 - 15 minutes each side.
Drizzle the peaches with olive oil. On a high heat on a grill plate, cook the peaches for 2 minutes on each side or until slightly charred.
In a large bowl, assemble the remaining salad ingredients. Drizzle up to 4 tablespoons of dressing all over and serve with the toasted sourdough.
