Summer Bliss Haloumi Quinoa Salad
Get ready for a fabulous dish, with our quinoa and haloumi Salad.
Cook up some quinoa, toss in crunchy veggies, sizzle some haloumi, and drizzle it all with our Poppy's Favourite Dressing. Yum!

Ingredients
- Cos Lettuce, roughly chopped
- 1 Cup cooked Quinoa/Rice, cooked and cooled
- ½ Red Capsicum, thinly sliced
- ½ Yellow Capsicum, thinly sliced
- 1 Cucumber, chopped into cubes
- 1 punnet Cherry tomatoes
- ½ Green Chilli, thinly sliced
- ¼ Red Onion, thinly sliced
- 180g Packet Haloumi, thinly sliced
- 2-3 Tbsp Rich Glen Poppy's Favourite Dressing
- Rich Glen River Salt, to season.
Directions
- Cook the quinoa/rice according to the packet instructions and set it aside.
- In a large serving bowl, add the lettuce, capsicums, cucumber, tomatoes, and chili.
- Drizzle a generous amount of RG Poppy’s Favourite Dressing over the ingredients and toss to combine.
- Cook the haloumi in a medium-heat pan, then add it to the top of the salad along with the red onion and River Salt flakes. Season to taste and serve immediately.
