Summer Bliss Haloumi Quinoa Salad

Get ready for a fabulous dish, with our quinoa and haloumi Salad.

Cook up some quinoa, toss in crunchy veggies, sizzle some haloumi, and drizzle it all with our Poppy's Favourite Dressing. Yum!

Ingredients

  • Cos Lettuce, roughly chopped
  • 1 Cup cooked Quinoa/Rice, cooked and cooled
  • ½ Red Capsicum, thinly sliced
  • ½ Yellow Capsicum, thinly sliced
  • 1 Cucumber, chopped into cubes
  • 1 punnet Cherry tomatoes
  • ½ Green Chilli, thinly sliced
  • ¼ Red Onion, thinly sliced
  • 180g Packet Haloumi, thinly sliced
  • 2-3 Tbsp Rich Glen Poppy's Favourite Dressing
  • Rich Glen River Salt, to season.

Directions

  1. Cook the quinoa/rice according to the packet instructions and set it aside.
  2. In a large serving bowl, add the lettuce, capsicums, cucumber, tomatoes, and chili.
  3. Drizzle a generous amount of RG Poppy’s Favourite Dressing over the ingredients and toss to combine.
  4. Cook the haloumi in a medium-heat pan, then add it to the top of the salad along with the red onion and River Salt flakes. Season to taste and serve immediately.
