Garlic, Leek & Bacon Soup

Enjoy a hearty bowl of comfort with this delicious soup recipe featuring our Wild Garlic Olive Oil. Packed with leek, chunky bacon and vegetables, this soup is perfect for warming up on chilly days. Topped with freshly grated parmesan and served alongside crusty sourdough bread, it's a satisfying meal the whole family will love!

Ingredients

  • 1 tbsp Rich Glen Wild Garlic Olive Oil
  • 2 large leeks, finely chopped
  • 5 rashers bacon, roughly chopped (it’s nice to have a few chunky pieces of bacon in your soup!)
  • 3 celery stalks, finely chopped
  • 2 carrots, finely chopped
  • 2 potatoes, skin left on, roughly chopped small
  • 3 cloves garlic, minced
  • 1 ½ litres chicken stock
  • 200g dried soup mix, rinsed thoroughly and drained
  • 1 can cannellini beans, rinsed and drained
  • Freshly grated Parmesan cheese, to serve
  • Sourdough bread, to serve
  • Rich Glen Garlic Salt, to serve

Directions

  1. To a large heated soup dish, add the Rich Glen Wild Garlic Oil, leeks, and bacon. Cook for 3-4 minutes or until the bacon starts to become golden and the leeks soften.
  2. Add the celery, carrots, potatoes, and garlic. Cook for a further 6-8 minutes until the veggies start to soften.
  3. Pour in the chicken stock and bring to a boil.
  4. Add the soup mix and cannellini beans. Cook for 30-40 minutes until the soup mix is thoroughly cooked through.
  5. Serve into bowls and sprinkle some fresh Parmesan and Rich Glen Garlic Salt over the top. Serve with fresh crusty sourdough and a drizzle with Rich Glen Wild Garlic Oil.
