This vibrant cucumber dill salad is incredibly easy, using only a handful of ingredients, yet delivers a burst of delicious flavour! Wonderfully refreshing with a crunch of roasted pine nuts.

  1. In a pan over medium heat, add the pine nuts and lightly toast for 1-2 minutes until golden. Then, set them aside to cool.

  2. In a large salad bowl, add all the ingredients and mix thoroughly to combine. Serve immediately.
