Cucumber & Dill Salad

This vibrant cucumber dill salad is incredibly easy, using only a handful of ingredients, yet delivers a burst of delicious flavour! Wonderfully refreshing with a crunch of roasted pine nuts.
This salad is perfect as a side dish for Christmas or as a main meal, pairing well with a Grilled steak or our Chicken Breast & Cherry Tomato recipe.

Ingredients
- 2 large handfuls rocket leaves
- 1 large cucumber, chopped into wedges
- ½ bunch dill, finely chopped
- 100g feta, crumbled
- ¼ cup pine nuts, toasted
- Pinch of Rich Glen River Salt
- 2 tbsp Rich Glen Basil Lime Thyme Oil
Directions
In a pan over medium heat, add the pine nuts and lightly toast for 1-2 minutes until golden. Then, set them aside to cool.
In a large salad bowl, add all the ingredients and mix thoroughly to combine. Serve immediately.
