Avo & Mango Summer Salsa

This fresh and delicious Avocado Mango Salsa is sweet and savoury with lots of lime and coriander. Great as an entraining appetiser, or pairs extremely well with our Grilled Chicken recipe as a main meal.

  • 2 Large avocados, cut into small cubes. Ripe, but still a little firm. 
  • 1-2 Mangoes, diced into small cubes
  • ½ Cup coriander, roughly chopped
  • ¼ Red onion, finely chopped
  • 1 Lime, juiced
  • 1 Green chilli, finely sliced (if you want this salsa to be a little more fiery, feel free to add another!)
  • River Salt, to season
  • 2 Tbsp Rich Glen Blood Orange Fig Dressing
  • Corn chips, to serve


  1. Add all the ingredients (except for the dressing) to a large serving bowl and toss gently to combine.
  2. Pour a generous amount of the Rich Glen Blood Orange Fig Dressing over the mixture, lightly toss again, and serve immediately with crunchy corn chips. Yum!
