Zesty Roasted Cauliflower
Cauliflower is such a versatile ingredient and can be cooked in so many different ways, try it with this hearty chickpea recipe, perfectly seasoned and roasted to golden perfection. Yum!

Ingredients
- 1 Whole cauliflower, cut into large chunks
- 1 Tin chickpeas (425g), rinsed and drained
- 1 – 1 ½ Tbsp Rich Glen Zesty Herb Rub
- 3-4 Tbsp Rich Glen Signature olive oil, for cauliflower
- 1 Tbsp Rich Glen Signature olive oil, for chickpeas
- Salt & Pepper, to season chickpeas
- 150-200g Greek Yoghurt
- Parsley, to garnish (optional)
Directions
- Preheat the oven to 180°C.
- Line two trays with baking paper and set them aside.
- In a large bowl, add the cauliflower chunks and set aside.
- In a small bowl, combine the Rich Glen Zesty Herb Rub and EVOO, then mix well.
- Pour the mixture over the cauliflower and toss thoroughly to coat.
- Spread the cauliflower onto one of the prepared baking trays.
- On the other tray, combine chickpeas, EVOO, and season with salt & pepper. Mix well.
- Place both trays in the oven and let the cauliflower and chickpeas cook for 20-25 minutes until golden and crispy. Turn them once or twice to ensure even cooking. You may need to remove the chickpeas a few minutes before the cauliflower. Once cooked, take them out of the oven and set aside.
- On a large serving platter or in a bowl, spread Greek yoghurt over the base.
- Top with the roasted cauliflower and chickpeas, garnish with parsley, and serve immediately.
