Chicken:
- 10-12 chicken drumsticks, skin on
- ⅓ cup Rich Glen Sticky Balsamic Reduction
- 2 tbsp Rich Glen Olive Blossom Honey
- 4 cloves garlic, minced
Seedy Slaw Salad:
- ¼ head white cabbage, finely shredded
- ¼ head red cabbage, finely shredded
- 2 stalks celery, finely chopped
- ½ green apple, chopped into matchsticks
- 1 tbsp pepita seeds
- 1 tbsp sunflower seeds
- 3-4 tbsp Rich Glen Zesty Lemon Lime Dressing
Directions
- Preheat the oven to 200°C.
- In a small bowl, mix together the Sticky Balsamic, Olive Blossom Honey, and minced garlic.
- Place the drumsticks in a large baking dish in an even layer. Pour about ¾ of the marinade over the drumsticks and use a basting brush to coat them well. Set the remaining ¼ of the marinade aside for later.
- Place the baking dish in the oven and cook for 35-40 minutes or until the chicken is cooked through. During cooking, turn the drumsticks occasionally and baste them with the pan juices for even cooking. Return to the oven to finish cooking.
- While the chicken is cooking, prepare the slaw salad. In a large serving bowl, combine the shredded white cabbage, shredded red cabbage, chopped celery, and matchstick-cut green apple. Pour over the Rich Glen Zesty Lemon Lime Dressing and toss well to combine. Just before serving, sprinkle with pepita and sunflower seeds.
- Once the chicken is cooked through, remove it from the oven and brush it with the remaining marinade.
- Transfer the chicken to a large serving plate and serve with the seedy slaw salad. Enjoy!
