Ros' Sticky Date Pudding

Ingredients
PUDDING:
- 2 cups seedless dates, coarsely chopped
- 2 bananas, mashed
- 1 tsp bicarb soda
- 1 1/2 cup boiling water
- 1/2 cup Rich Glen Frantoio Extra Virgin Olive Oil
- 1 cup brown sugar
- 2 eggs
- 2 cups self raising flour
CARAMEL SAUCE:
- 160 g butter
- 2/3 cup brown sugar
- 1 cup thickened cream
Directions
- Preheat oven to 170°C, and grease a square cake tin or china casserole dish. Next, place dates and bicarb soda into a bowl and pour over boiling water. Set aside for 30 minutes.
- Beat together sugar and Rich Glen Frantoio olive oil until creamy. Add the eggs one at a time, and beat well. Mash the dates and fold through sugar mixture, along with the mashed banana and flour. Stir until well combined.
- Place into prepared cake tin, and bake for 30-40 minutes. Set aside.
- To make the sauce, combine all ingredients into a small pot and cook and stir until the sauce boils. Reduce to a simmer and cook for 2 minutes.
- Turn cake out on to a large serving bowl and poke the cake all over with a skewer. Pour over ½ of the warm caramel sauce. Stand for 10 minutes, cut and serve with another lashing of caramel sauce and a scoop of vanilla bean ice cream! Yum!
