Pear & Pomegranate Christmas Salad
This gorgeous salad recipe is bursting with vibrant pomegranate, crisp pear, and crunchy walnuts! This salad will brighten up your holiday table, and liven up a regular weeknight dinner. Enjoy!

Ingredients
- 120g Rocket Leaves
- ¼ Cabbage, cut the leaves into medium chunks
- 1 Red Pear, thinly sliced
- ½ Cup Pecans
- ½ Cup Walnuts
- 2 Tbsp Rich Glen Olive Blossom Honey
- 80g Goats Cheese
- ½ - 1 Pomegranate arils
- 1-2 Tbsp Rich Glen Pomegranate Balsamic
Directions
- Heat a frying pan over medium heat, then add the pecans, walnuts, and RG Olive Blossom Honey. Heat for 2-3 minutes or until the honey becomes slightly sticky.
- Remove from the heat and allow the mixture to cool completely. Break it into chunks and set aside.
- On a large salad plate, combine the rocket, cabbage, and pear. Drizzle a generous amount of RG Pomegranate Balsamic over the salad.
- Add the nuts, goat cheese, and pomegranate arils, then serve immediately.
