Loaded Dipping Oil

Sweet roasted garlic, Rich Glen Wild Garlic Olive Oil, olives, capers, parmesan and fresh herbs come together to create the ultimate flavour-packed dipping oil. Serve with warm crusty bread and watch everyone gather around for more.

Ingredients

1 whole garlic bulb
1/2 tsp flaky salt
1/3 cup Rich Glen Wild Garlic olive oil
1/3 cup Kalamata olives, chopped
2 tbsp capers
Zest of 1 lemon
Juice of 1/2 lemon
30g parmesan, grated
2 tsp paprika
1/2 bunch parsley, finely chopped
1 tsp chilli flakes
Bread to serve (baguette or focaccia)

Directions

  1. Preheat oven to 180°C. Slice top off garlic bulb, drizzle with olive oil, sprinkle with salt and wrap in foil.
  2. Roast for 30 minutes until soft and caramelised.
  3. Squeeze roasted garlic into a serving dish and lightly mash into the oil.
  4. Add olives, capers, lemon zest, juice, parmesan, paprika, parsley and chilli flakes.
  5. Mix well until combined.
  6. Serve with warm toasted or pan-fried bread.
