High Protein Chicken Nachos

Ingredients

  • 1 Large Packet  Corn Chips
  • 500g Chicken Mince
  • 1 Tbsp Smoked Paprika
  • 2 tsp Cumin
  • 2 tsp  Minced Garlic
  • 1 Tbsp Rich Glen Fiery Chilli Olive Oil
  • 425g Tin Black Beans, rinsed
  • ½ Green Capsicum
  • ½ - ¾ Punnet Cherry Tomatoes, chopped finely
  • ½ Red Onion, thinly sliced
  • 4 Spring Onion, finely chopped
  • 1-2 Avocados, smashed and seasoned with Rich Glen Chilli Salt
  • ¼ Bunch Coriander, to garnish (you can add as much or as little as your taste buds desire)
  • Green Chilli, finely chopped (you can omit if you find green chilli too hot)
  • 200g Mozzarella Cheese, grated
  • Rich Glen Zesty Lemon Lime Dressing
  • Rich Glen Yarrawonga Sweet Chilli Sauce

Directions

  1. Preheat the oven to 180°C.
  2. Line a tray or shallow oven dish with baking paper and set it aside.
  3. Heat a pan on medium to high heat; add the chicken mince, paprika, cumin, minced garlic, and Chilli Agrumato Oil. Cook until the chicken is thoroughly cooked.
  4. Arrange the corn chips in a single layer on the baking tray, then pour the cooked mince over them.
  5. Add the black beans, sprinkle over the spring onion and green capsicum, and top with cheese. Place it in the oven for 5-10 minutes until the cheese melts and starts to turn golden.
  6. Remove from the oven and add the red onion, tomatoes, green chilli, and dollops of smashed avocado.
  7. Garnish with fresh coriander and, to elevate the flavour, generously drizzle RG Zesty Lemon Lime Dressing or RG Sweet Chilli Sauce — or even both — to take these nachos to the absolute next level!
