Christmas Crispy Chickpea and Heirloom Tomato Salad
There's nothing better than delicious fresh juicy heirloom tomatoes. This festive dish combines crispy chickpeas, sweet heirloom tomatoes, rocket, and our Balsamic dressing. Perfect for Christmas gatherings or a special meal, that everyone will adore.

Ingredients
- 1 Tbsp Rich Glen Signature extra virgin olive oil
- 1 Can Chickpeas, rinsed and drained
- 1 Tsp Smoked Paprika
- Rich Glen River Salt to season
- 3-4 Medium Heirloom Tomatoes, thickly sliced
- 120g Rocket
- 2 Tbsp Rich Glen White Balsamic Chardonnay
- 2 Tbsp Rich Glen Sticky Balsamic Reduction
- 100g Smooth Feta or Goats Cheese
- Small handful basil leaves to garnish
- Small handful fresh dill to garnish
Directions
- Heat a pan, add the EVOO, then the chickpeas, and stir. Season with salt, add the smoked paprika, and stir. Cook for around 4-5 minutes, or until the chickpeas start to become crispy, then set them aside to cool.
- To make the dressing, add the White Balsamic and Sticky Balsamic to a small bowl, then whisk them together and set the dressing aside.
- On a large serving plate, place the rocket, then top it with the sliced tomatoes and chickpeas. Sprinkle the feta over the top, add the fresh herbs, and drizzle with the dressing. Serve immediately.
