Crunchy Raw Kale Salad
Raw veggies are so amazing freshly picked from the garden and chopped straight away… packed full of vitamins and so tasty! The weather we are experiencing is amazing so crank up the barbie, clean the outside entertaining area and prepare this raw veggie salad. It’s crunchy, nutty, flavoursome and super healthy, great to plonk in the middle of the family table with BBQ meats…
Ingredients
- ½ Cauliflower, finely chopped
- 1 head Broccoli, finely chopped
- 6 Young Kale leaves, finely shredded
- Handful fresh Parsley, chopped (coriander and mint are nice too)
- ¼ cup Aussie Pumpkin Seeds
- 2 Carrots, grated or fine julienne
- Handful of raw Australian Almonds
- ½ cup dried Cranberries
Dressing Ingredients:
- 1 tsp Ginger, grated
- 1 Lemon, freshly squeezed
- 100ML RG Extra Virgin Olive Oil (EVOO)
- 1 tsp Salt Flakes
- Fresh Cracked Pepper, to taste
- 1 tsp Olive Blossom Honey
Directions
- Place all dressing ingredients in a jar with a lid and shake vigorously. Alternatively, you can use our Poppy's Favoruite Dressing instead of making your own.
- Toss all salad ingredients together, pour over dressing and toss… Delish.
