Ingredients
- 320-400g Beef Eye Fillet or similar for grilling
- 1 Tbsp Rich Glen Signature extra virgin olive oil (EVOO)
- 1-2 Tsp Rich Glen Thai Spice Rub
- 1 Large Avocado
- ½ Red onion, finely chopped
- ½ Bunch Coriander, finely chopped
- 1 Tbsp Rich Glen Zesty Lemon Lime Dressing
- 1 Lime, cut into wedges
- 1 packet small Tortilla Wraps
Directions
- Place the steak on a large plate and drizzle with EVOO on both sides. Then sprinkle over Rich Glen Thai Spice Rub and rub it gently into the steak. (You don’t want to add too much spice rub, just enough to flavour the steak.) Then let the steak sit and come to room temperature.
- Once the steak is at room temperature, add it to a hot grill pan and cook for about 3-4 minutes on each side (for medium), or until cooked to your liking. Remove it from the heat and let it rest.
- While the steak is cooking, mash the avocado in a bowl, then add the red onion, coriander, RG Zesty Lemon Lime Dressing and mix well to combine.
- Toast the tortillas slightly in a hot pan, then place them onto a plate and cover to keep warm.
- When ready to serve, add the avocado mixture to each tortilla, along with some steak, an extra sprinkle of coriander, a squeeze of lime juice, enjoy!
