Hot Cross Bun Slice
Hot Cross Bun Slice, bursting with cinnamon, mixed spice, and sweetened with coconut sugar and Olive Blossom Honey, perfect to share on Easter morning!

Ingredients
Wet Ingredients:
- ½ cup cashew butter
- ½ cup almond butter
- 2 eggs
- ½ cup coconut sugar
- ¼ cup Rich Glen Olive Blossom Honey
- 1 tbsp Rich Glen Signature Extra Virgin Olive Oil
- 1 tsp pure vanilla extract
Dry Ingredients:
- 2 tbsp almond flour
- 1 tbsp rice flour
- 1 ½ tsp cinnamon
- 1 ½ tsp mixed spice
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup sultanas or dried mixed fruit
- ¼ cup white chocolate chips + ¼ cup dark chocolate chips (optional)
Directions
- Preheat oven to 170°C.
- Line a square baking tin with paper and set aside.
- Add the wet ingredients to a large bowl and mix until well combined.
- Add in the dry ingredients and gently fold through.
- Pour the mixture into the prepared baking tin and tap the tin on the bench top to even out the mixture and smooth the top. (The mixture will be quite sticky, so don’t worry.)
- Place into the oven and bake for 20 minutes.
- Take out from the oven and allow to cool in the tin for 5 minutes before transferring onto a wire rack to cool completely, then slice into squares.
- Crosses (optional) can be made with icing sugar and water and drizzled over the top of each slice square once completely cooled.
