Ingredients

Directions

  1. Preheat the oven to 180°C. Line a 12-hole muffin tin with patty pans.

  2. In a large bowl, add the flour, brown sugar, cinnamon, and baking powder. Stir until combined.

  3. Stir in the diced apple.

  4. In a separate bowl, whisk together the oil, vanilla, milk and Rich Glen Apple Sauce.

  5. Pour the wet ingredients into the dry ingredients and stir until just combined.

  6. Divide the mixture evenly between the patty pans and sprinkle with raw sugar.

  7. Bake for 20 to 25 minutes or until golden and fully cooked through. Allow the muffins to stand for 5 minutes before transferring them to a wire rack to cool completely. Makes 12.

To decorate, you can add some cooked apple slices on top as a garnish.

Note: You can also make the muffins gluten-free by replacing the self-raising flour with a gluten-free alternative.
