Buttermilk Lemon Pancakes topped with Wild Berries

Treat yourself to a delightful morning at home with our Buttermilk Lemon Pancakes topped with Wild Berries! These pancakes are a fluffy delight, brimming with wild berries, and a hint of lemon that guarantees a crowd-pleasing burst of flavour.

Ingredients

Directions

  1. Place dry ingredients in a large bowl and mix to combine
  2. Add eggs, milk, maple syrup and mix thoroughly until well combined.
  3. Add in Rich Glen Agrumato Lemon Lime Olive Oil and fold through slowly until just combined.
  4. Spray a fry pan with Rich Glen Olive Oil Spray and spoon mixture in and cook until golden. 
  5. Continue to cook pancakes with remaining batter.
  6. Once pancakes are cooked, cover with a clean tea towel to keep warm.
  7. In the same fry pan, pour in the berries and the Rich Glen Pomegranate Balsamic Reduction and cook until berries start to soften. Then mash berries slightly with a fork.
  8. Plate up pancakes, top with the wild berries, and add an extra drizzle of Lemon Lime Oil and Pomegranate Balsamic, along with a sprinkle of hemp seeds and some lemon zest, ENJOY!
